Our School of Taste programme, emphasizes hands-on learning, where we explore fundamental concepts of taste, flavour profiles, and the value of true nourishment. Our mission is to educate individuals about the cultural and social significance of taste while envisioning a kinder and more sustainable future that supports the preservation and enhancement of our biodiversity.
Our mission is to create an inclusive outsiders' platform for learning about the intersection of sustainability and culinary arts. In partnership with ethnobotanists, artists, scientists, growers, and local food activists, we delve into both ancient and contemporary flavour perceptions. Our objective is to cultivate more autonomous and hybridized food practices that address the pressing challenges of our time. We are currently based at Knowlands Farm, a family run place that manages a patch of 300 acres of Wealden clay grassland, woodland and arable land in central Sussex, and practise regenerative farming “with wildlife in mind. We are exploring more locations for 2026.
We run the program commercially on a sliding scale basis to give as many different people the opportunity to join. We are however applying to various UK funding bodies in order to be able to offer courses to more children and young people across Sussex and the wider UK whose families might not have the financial means to join the programme otherwise.
