About the Program: 

Goal: To expose students to the importance and biodiversity of local food. This goal will be achieved through growing and tasting a variety of crops throughout the winter and summer months.Students will grow and taste varieties not widely available , and also learn seed saving skills for future planting. Students will research heritage and rare food cultivars. During winter, sprout edibles such as beet greens, radishes,arugula, alfalfa, corn, peas, brassicas, lentils can be grown indoors with artificial light, in trays.The students will sample the sprout varieties of the "living salad bar", while learning on a small scale how to cultivate food through weekly duties of re-planting, watering ,light adjustments and harvesting. Spring and summer will focus on growing full season crops, many of which were grown during the winter ,as sprouts. The students will harvest and collect the seed in the summer and fall. A collective meal will be planned and prepared when school returns. This program is supported by .
