Harvest of the Month: Pomegranates

 In this lesson, students learn about seasonality, familiarize themselves with new vocabulary, write their own recipes, and create a healthy after school snack that is easily replicated at home.


 Students will be able to:

  • Effectively use measuring cups and follow a recipe
  • Become familiar with the pomegranate, when it grows, and how to prepare it so that it can be enjoyed in a recipe
  • Learn to forage herbs from the garden
  • Define the words forage and pomegranate

Students will be able to:

  • Correctly spell and define forage and pomegranate
  • Write a recipe
  • Execute a recipe independently
  • Prepare a pomegranate so that the fruit can be enjoyed
  • Forage mint from the edible school garden

 Butcher paper (optional)





plain or vanilla yogurt




Pomegranate Parfait Recipe:

1/2 cup of yogurt

1/4 cup of pomegranate

1/4 cup of oats

1 tsp. honey (optional)

2 leaves of mint 



In a cup, layer in yogurt, oats, pomegranate and repeat. Add honey and mint for garnish. Mix ingredients together and enjoy!


  •  Begin by welcoming students, allow them to get settled and make sure that students have a pencil and index card
  • If you have access to an edible garden, announce to students that you will be taking a little field trip to the garden to forage ingredients
  • Have each student forage two leaves of mint that can be used to make the pomegranate parfait
  • Upon returning to the classroom, remind students of the importance of kitchen hygiene and have students wash their hands
  • Write the "pomegranate parfait" recipe on the board so that students can copy down the recipe and learn how to spell more challenging words
  • Ask students whether they know what a pomegranate is and whether they can define it, discuss its color, where it comes from, when it grows, etc.
  • Turn students' attention to a pomegranate parfait demonstration where one volunteer will demonstrate the pomegranate parfait recipe from start to finish
  • Hand out ingredients to each table and allow students to work through the recipe independently
  • Once the students have successfully completed the recipe, allow them time to enjoy the snack they have prepared.
  • After they finish, remind students of the importance of cleaning up and work together to leave the room cleaner than when you arrived.


I love the idea of giving the students examples of afternoon snacks, that they can grow and make themselves.

I like the idea of "foraging," and of the "Harvest of the Month" in general. We're going to try using a similar concept as a theme for our weekend programming.
