Edible Education 101: The Promise of Transparency in the Food System

The Edible Education 101 course was created in conjunction with the 40th anniversary celebration of Chez Panisse Restaurant and Café in Berkeley, California. Alice Waters, founder of Chez Panisse and the Edible Schoolyard Project, launched the course in partnership with University of California, Berkeley to bring edible education to the university level. The course, a unique hybrid public lecture series and for-credit class, has been offered to undergraduate students and members of the general public for four semesters since 2011.

The 2017 course was co-hosted by Will Rosenzweig, a Fellow at the Institute for Business and Social Impact at BerkeleyHaas, and Alice Waters.

  • Raj Patel

Raj Patel is an award-winning writer, activist and academic. He is a Research Professor in the Lyndon B Johnson School of Public Affairs at the University of Texas, Austin and a Senior Research Associate at the Unit for the Humanities at the university currently known as Rhodes University (UHURU), South Africa.

  • Michael Pollan

Michael Pollan is the author of Cooked: A Natural History of Transformation (2013) and of four New York Times bestsellers includingThe Omnivore’s Dilemma: A Natural History of Four Meals (2006). In 2003, Pollan was appointed the John S. and James L. Knight Professor of Journalism at UC Berkeley’s Graduate School of Journalism.
