The Edible Education 101 course was created in conjunction with the 40th anniversary celebration of Chez Panisse Restaurant and Café in Berkeley, California. Alice Waters, founder of Chez Panisse and the Edible Schoolyard Project, launched the course in partnership with University of California, Berkeley to bring edible education to the university level. The course, a unique hybrid public lecture series and for-credit class, has been offered to undergraduate students and members of the general public for four semesters since 2011.

The 2017 course was co-hosted by Will Rosenzweig, a Fellow at the Institute for Business and Social Impact at BerkeleyHaas, and Alice Waters.

Lecturer

Michel Nischan is a three-time James Beard Award-winning chef with over 30 years of experience advocating for a more healthful, sustainable food system. He is Founder and CEO of Wholesome Wave, Co-Founder of the Chefs Action Network, as well as Founder and Partner with the late actor Paul Newman of the former Dressing Room Restaurant. He’s also the author of three cookbooks and a variety of articles focused on sustainable food systems and social equity through food.
